Nuoc cham is typically made with fish sauce, lime juice or vinegar, sugar, chili, and garlic.
It takes on different forms depending on the region and the dish it accompanies.
The sauce is served alongside fried spring rolls and banh xeo (crispy pancakes), besides noodles and soups.
Another Vietnamese representative on this list is mam nem, a fermented anchovy sauce, which is in 15th place. It carries a more pungent flavor than other fish sauces.
While fish sauce is strained to yield only the liquid, mam nem is made using the whole fish.
The sauce is usually mixed with ingredients such as sugar, chili, and garlic, and goes well with dishes such as grilled beef.
France’s fondue jurassienne, a cheese dip made with white wine, topped the list, while Ethiopia’s awaze, a spicy paste made with berbere spices, honey wine, and oil, was second.
